When the heirloom cucumbers began producing, I had to look for more ways to use them. I already have enough pickling cucmbers made into dill pickles and others.
Here is our favorite ways of using alot of open-pollinated cucmbers. Ours are the straight eight variety and are very nice this year. I like to pick them when they are still slender. You can peel them or leave the peel on. Slice them thin and shake a good bunch of salt on them. Let them set for 15- 20 minutes. There will be alot of juice which should be drained off. I chop some onions, red or white, and add them to the cucmbers. Then we put sour cream on them and mix well. The red onions make it a little prettier. If you have any fresh green onions, they work well, too.
I also like to simply cut cucumbers, heirloom tomatoes and some onion into small cubes. Add a little salt and enjoy!
